I can incorporate some form of avocado into about 90% of my diet. The homemade omelette below was made with organic brown eggs, cheddar cheese, and homemade guacamole. I scrambled two eggs, and added them to a buttered skillet (no more than three scoops). I let it cook long enough to lay flat like a pancake, and sprinkled shredded cheddar cheese and cooked spinach into the middle. I folded the egg over twice, and topped it with guacamole mixed with 3 dashes of seasoned salt. It was delicious! I toasted sourdough bread as a side.
