I’m sure you all have chicken drumsticks, wings, etc. in the fridge for the big game tomorrow! Here’s a Roscoes inspired recipe (modified from Food Network) that will put that chicken to good use! I would say all this takes about 45 min to an hour.
1/3 cup water
2 cups self-rising flour
1 teaspoon pepper, garlic powder and seasoning salt
Chicken drumsticks and breasts
Oil, for frying, preferably peanut oil
1 1/3 milk
2 tablespoons vegetable oil
Season chicken with pepper, garlic powder and seasoning salt.
In a bowl pour flour. Dip the seasoned chicken in the flour and coat well.
Heat the oil to 350 degrees F in a deep pot. Do not fill the pot more than 1/2 full with oil.
Fry the chicken in the oil until brown and crisp. Dark meat takes longer than white meat. It should take dark meat about 13 to 14 minutes, white meat around 8 to 10 minutes.
Follow directions on back of Bisquick pancake mix for waffles.
