Whether you’re a morning person or a night person, everyone across the world can appreciate the delicious delights that brunch food has to offer; And with summer around the corner, a new brunch style recipe has hit the internet and has the foodies going wild. That recipe is called ‘Bell Pepper Eggs in-a-Hole,’ and its a tasty/ festive twist on the traditional egg dish.
During our couples trip in Big Bear, CA, we threw a small brunch party with mimosas, pastries, and the egg dish photographed above. The particular recipe we used was found at natashaskitchen.com, but you can find a variety of different ways to recreate this recipe on Instagram, Pinterest, or Facebook!
1 red bell pepper (yellow would probably work just as well)
4-5 large eggs
1/4 cup grated cheddar cheese (other cheese should work as well)
1 Tbsp Olive oil
Directions: 1. In a large, non-stick skillet, heat 1 Tbsp olive oil over medium/high heat. 2. Cut peppers into 1/2″ rings and remove the seeds and centers. Place sliced peppers into the pan and let them saute for a minute. 3. Crack one egg into the center of each bell pepper slice. Start pouring the egg in slowly. 4. Sprinkle salt and pepper over each egg. Saute for 3 minutes, then flip it over carefully. 5. Top with a generous amount of cheese 6. If you want your yolks to be (over easy), cook another minute.
