So I decided to try vegan food for the first time recently. My cousin and I had lunch at the Sage Vegan Bistro, and although I was nervous about my meatless meal, it turned out to be really good! I ordered the chilaquiles — made with organic yellow corn chips, tofu egg, kale, and homemade green sauce sautéed with daiya cheese, topped with guacamole, garlic aioli, and pico de gallo. I definitely recommend this dish, especially for those who aren’t used to vegan food. Enjoy!
