I discovered the Trukquito food truck on Instagram, and once I saw photos of the gourmet cuisine, I knew I had to try it. We met Wes and Veronica (the owners) on Friday night at the EightTwo Arcade in the Arts District. We tried the Tomatillo Quitos – made with marinated chicken, tomatillo cream, cilantro, and shredded cheddar cheese. The Trukquito Fries topped with cheddar cheese, onions, tomatoes and cilantro; and the ShrimpQuito – made with sauteed shrimp, siracha honey, micro greens, and chopped walnut.
